I have been seeing cream recipes with chia seeds for a long time, like for example almond milk, fruit or any other liquid or semi liquid food which need to get a gel like consistency thanks to the mucilaginous properties of this seed. I don´t like too much the jelly-like things so I never tried to use them in this way.
But one day it happened. I went for it.
Watching one video of a blog which is pretty inspiring to me, it happened. Green Kitchen Stories is fresh and beautiful. Pretty inspiring. Her recipe used raspberries and a glass jar that you can transport wherever you want. I really love that concept of food in jars. You can prepare it one day in advance and the next day you grab it and carry it with you whenever you go. Through the glass you can see the different layers of your delicious food, either a cream or a salad or a dessert or a breakfast. A lot more appetizing than a plastic tupper.
The idea came to me with the mango season in Spain. Hurrah for Malaga and its mangos! Take advantage before the season is finished, buy, cut and freeze enough to have some stock in the freezer.
Mango. I always try to associate something sweet with something sour or spicy, with a spark, with bitterness, with contrasts of textures to enhance the flavour of the cream. Ginger, lemon, cocoa nibs, coconut, kiwi and pomegranate, It is also the season for all of them. It was easy. Sometimes I ask myself if this can be called a recipe or a simple association of ingredients. And the most convenient thing is that when you are getting the dinner ready, you prepare it quite fast, fill a few jars and the whole family has breakfast for the next day, or an snack for the mid-morning whenever you feel you don´t have energy, or a delicious dessert if you use a shot glass.
Ah and the most important thing! 0% sugar. Only the one in the fruit. 100% energy and sweetness with an amazing taste. Easy to prepare. It has absolutely everything!

It has emerged recently as a super food and although I am always very cautious when a new ingredient comes out and it is supposed to have magic properties, I recognize that as time goes by, this seed has got a place in my kitchen.

With so much information you won´t find any excuse not to try it! You can use any fruit, although I don´t recommend the pear or the apple as they will get a darker color when they oxidize. But if you decide to use it in apple sauce, it will be truly delicious! In winter I recommend banana and orange juice with a little bit of its zest; in summer, peach and cardamom or melon with lemon and mint, or strawberries with vanilla and a little of balsamic vinegar. There are infinite possibilities for you to try!
Ingredients
570 gr peeled and pitted mango
6 gr of ginger grated very thin
10 gr of lemon juice
1 tbsp of lemon zest
a pinch of salt
2 tbsp of almond milk (or coconut milk and water)
4 tbsp of chia seeds
topping: kiwi, grated coconut, pomegranate, cocoa nibs and hemp seeds
instructions
- In a food processor mix the first 6 ingredients.
- Add the chia seeds and stir so they can get distributed evenly.
- Put them into different jars and put whatever toppings you prefer. When you are ready to eat it, make sure to stir it well.
