No, believe me. No, I haven´t retouched the photos. The color is authentic and incredible. It is pure magic. You just have to put all the ingredients in the blender, push the button and zas! When you open it, it seems as if a magician had been there doing his magic color tricks.

The first time I made it was the other day in one of my kitchen workshops and let me tell you honestly, I hadn´t tried it before to see what the result was going to be. One thing is to have a clear idea of something you tasted for the first time in a restaurant, and a very different thing to get it done for the first time in front of your students. A little bit risky? Yes. But it happens that sometimes one feels enough confident and in this case, I happened to surprise all the attendees and not only that, I couldn´t believe it either! It was the same color, even stronger than my long missed Can Punta. A little restaurant near Palma de Mallorca, situated in front of a small fishermen village in the Portixol area, which unfortunately changed ownership at the end of the last season. To be there on Sundays, in his little terrace with the sun, the Majorcan sea and its delicious food, was an authentic pleasure for me. Also the manager was a sweetheart.

They served there a hummus with beetroot, capers, onion and toasted bread on the top to die for. Since they included in the menu, I ordered it almost every time I went there. Now after upsetting me so much to know that the owners had changed, I can at least comfort myself preparing it at home. But that beautiful color….ay! It makes everyone happy!

The recipe is super-easy and needs very few ingredients. Enough reasons to make it during this weekend. And if you are lucky enough to be invited to dinner at someone´s home, or if you are the one having guests at home, or even if you go on a trip, please bring it with you and observe the faces of the people around you. You only need to have cooked chickpeas (it would be perfect if you have the chance to cook them by yourself, but otherwise, buy them in glass pots and rinse them well) and the boiled beetroot. Please, don´t buy the beetroot already cooked, buy it fresh and cook it by yourself. It takes nothing! You just have to bring it to boil until it gets soft.

Now it is your time to practice, I am going to organize the next workshop…Who knows, maybe I can get something else with magical color, without having thought about it in advance!

 

Ingredients

280 gr of cooked chickpeas

1 unit of raw beetroot

4 tbsp of lemon juice

2 tbsp of tahini

1 clove of garlic

40 grams of water

40 grams of extra virgin olive oil

1/2 tsp of salt

1/4 tsp of ground cumin

Instructions

  1. Cook the beetroot well covered with water until it gets soft. Let it cool. Peel it.
  2. Put all the ingredients inside the blender and grind them until you get a creamy consistency. Add salt and water if you consider it necessary.
  3. Enjoy!
